Muffins are a quick bread. They run the gamut from breakfast to dinner, sweet to savory. They're fast and easy to make and sure to impress. Make sure you spray the pans with a nonstick spray if you're going to forego the paper lining (which I never use for muffins).
I love the mini muffins - my husband is a tad lukewarm about them. What he likes are muffins made in the hamburger tin (another shopping section for another day) because they come out like "big top muffins." Yes, I've used them to make hamburger buns as well, but the big top muffins are his preferred choice for those pans.
Another great items is the cast iron corn muffin pan. These are usually molds shaped like little ears of corn. Cast iron is great for quick breads - the edges are nice and crispy and they brown up nice and even.
